Anti-Inflammatory Sweet Potato Toast

GF, Vegan, Grain Free, and seriously addictive.

This Gluten free, Vegan, Grain free recipe is full of anti-inflammatory healthy fat and tasty low glycemic sweet potatoes. 

  • Preheat oven to 400 degrees

  • Slice sweet potatoes about 1/4 inch thick

  • Roast sweet potatoes for about 20 mins until edges are starting to brown

  • Saute mushrooms in the skillet with avocado oil or grass-fed Ghee.

  • When mushrooms are almost done cooking toss a handful of spinach or greens over top to wilt.

  • Remove sweet potatoes from the oven and let cool for a few minutes.

  • Top sweet potatoes with crushed avocado and mushroom/spinach mixtures.

  • Sprinkle sea salt, hemp seeds, or crushed pepper over top.

  • ENJOY!
