GF, Vegan, Grain Free, and seriously addictive.

This Gluten free, Vegan, Grain free recipe is full of anti-inflammatory healthy fat and tasty low glycemic sweet potatoes.
Preheat oven to 400 degrees
Slice sweet potatoes about 1/4 inch thick
Roast sweet potatoes for about 20 mins until edges are starting to brown
Saute mushrooms in the skillet with avocado oil or grass-fed Ghee.
When mushrooms are almost done cooking toss a handful of spinach or greens over top to wilt.
Remove sweet potatoes from the oven and let cool for a few minutes.
Top sweet potatoes with crushed avocado and mushroom/spinach mixtures.
Sprinkle sea salt, hemp seeds, or crushed pepper over top.
